One thing that has become apparent in lockdown, especially now that the Twins are doing their schoolwork at home, is that everyone needs a computer nowadays. It’s surprising how much I use mine when I think I’m actually doing something else, like cooking, or gardening, or even just reading; I need to look things up, or write things down, constantly, obviously. Last night as The Author was preparing dinner, he said, “I don’t actually enjoy cooking anymore.”
I know how he feels.
Around our house, dinner can be a contentious time. The Author and I prefer a more continental dining time, and the kids prefer – well, I don’t actually know what they prefer half the time. When we try to get dinner on the table at a reasonable hour (that would be 7:30 for us), they complain that they don’t want to eat that early. When we lag behind and get dinner on the table late (sometimes as late as 9:00), they complain about the food.

You know how sometimes – maybe all the time – you come home at the end of the day and the last thing you want to do is cook? And you know how, sometimes, if you make that little bit of effort with a dish you’ve been wanting to make, it’s all worth it?
Well, this might not be that dish.
First of all, perhaps I should tell you what this dish is: a combination of light and flavourful crespelle (aka crêpes or pancakes) rolled with three types of cheese and whatever garden green you have going at the moment. Then the whole thing is baked together, which doesn’t seem like it should be as good as it is, but it is.

This past weekend, Anna and I ran a pop-up café at the Crux Craft Fair, which is a brilliantly run annual fair promoting great quality handmade crafts. Do I have any pictures of it to show you? No. We were so busy cooking that it wasn’t until 4:00 on Sunday (an hour before the entire shebang ended) that Anna and I were able to get out of the kitchen to see everything on display.

To paraphrase Shakespeare, some cookies are made great, and some cookies have greatness thrust upon them. I think that biscotti are the latter.
With very few ingredients (what, no butter?), biscotti seem like cookies born of deprivation. A biscotto* is a cookie that is hard, dry, and looks very much like toast. Truly, there is not much to recommend it. But have it with a cup of tea or coffee, or even a glass of red wine, or vin santo (my favourite), and you have achieved cookie perfection. Continue reading
